What are the advantages of a stretcher shovel over a traditional shovel?
The stretcher shovel makes baking much easier because it does not deposit the pizza by traction but by falling, which prevents the pizza from deforming and also allows more products to be baked at the same time (e.g. mini pizzas, sandwiches, saltimbocca, etc.)

What changes between the Vesuvius shovel and the Vesuvius Evolution shovel
The Vesuvius Evolution shovel is the evolution of the Vesuvius shovel, in practice the previous model has been completely revisited and several improvements have been made. First of all the Vesuvius Evolution shovel has a new protection that allows you to avoid contact between the sheet and the base but at the same time also allows you to load the pizza directly with the shovel, with the same measurements it is 20% lighter than the Vesuvius shovel, it has a new more resistant sheet with better non-stick and the sheet is no longer fixed with clips but is blocked with screws.

What is the difference between brown and black Teflon cloth?
Both sheets are made of the same material (Teflon), resistant to high temperatures, non-stick, washable and certified for contact with food but the black sheet is slightly thicker and therefore more resistant, furthermore the black sheet is of the latest generation and has improved non-stick properties.

Where should the pizza be placed on the peel?
It is advisable to always place the pizza on the front part of the peel (at the tip) so as to place it as close as possible to the bottom of the oven.

How long does Teflon sheeting last?
The Teflon cloth has a long life which however depends on the frequency of use and above all is linked to correct use.

Is it necessary to use semolina on the cloth to prevent the pizza from sticking?
Our cloths are highly non-stick so with a correctly kneaded dough it is not necessary to use semolina or flour to dust the cloth, it may be necessary in minimal quantities only for highly hydrated doughs.

Doesn't the tarp burn at temperatures of nearly 500 degrees?
Our shovels (Vesuvius and Vesuvius Evolution) are equipped with special protections that prevent the sheet from coming into contact with the base, furthermore Teflon is a material that resists high temperatures so during the time needed for baking there is no risk that the sheet could be damaged.
